Weather washing out your cookout plans? You have the tools you need for an indoor barbecue in your kitchen right now. Think: oven-roasted ribs, saucy BBQ chicken, charred burgers, and juicy steaks. The way we see it, ribs are a year-round necessity and pulled pork a hearth-sitting pastime, and thus crockpots, homemade smokers and ovens are mighty-fine stand-ins for your grill.
If a cold beer to coordinate with your tongs doesn’t sit quite right in winter, you could try a shot of palinka and you will see the entire world differently.
Opposite to a summer barbecue, during the winter you for sure should choose warm vegetables, potatoes and/or pasta beside cold greens. Delicious zucchini, carrots or broccoli – enough choice in the winter!
Last weekend Apafőz, our personal and premium home cooking service division made lamb burgers with barbecued vegetables. We made the spiced flatbreads on a small oven, which sits on top of your gas hob. While the barbecue was heating up, we roasted some whole peppers on the warm coals. We charred them on the outside and when they’re fully blackened, we put them in a bowl covered with clingfilm. After a few minutes, the skin just slides off and you’re left with this smoky delicious flesh. We did the same with an aubergine, which we then mashed and mixed with olive oil, garlic and coriander. We also made a fresh, peppery salad and dished up some chutney, relish and a barbecue dip, then we filled the flatbreads with whatever ingredients we fancied.
