If you’re getting really fed up with the usual frozen fish fingers that are quick and easy but not very creative or varied, start off the New Year with these marvellous recipes and eat something that’s more fun and a whole lot healthier for a change: let’s do something fishy!
A true Hungarian meal in every bit, made of carp fish. Take out the inside parts, season it. Cook some potatoes, then put them into an oven pan, add some onions, peppers, tomatoes and bacon, season them and put the fish on top. Get about 5 dl sour crème, mix it with red paprika powder, lay the crème atop and put the whole thing covered into the oven for half an hour and let it roast for about this long without the cover, too. 3 tablespoons of brown sugar, the same amount of bourbon, 2 tablespoons of low-sodium soy sauce, one of both grated peeled fresh ginger and lime juice plus some minced garlic & freshly ground black pepper. Put all these into a zip-top plastic bag adding the fish as well and leave it in the fridge to marinate for about 2 hours. Heat a non-stick pan and cook the fish for 4 minutes each side, serve it with about 2 teaspoons of the juicy sauce. Sprinkle it with sesame seeds if you like. Yummie!
Tuna Noodle Casserole
There are tons of ideas for a tuna meal, this one’s an example of the creative use of the popular fish. A package of egg noodles, some celery, onion, peas, cheese and mushroom can work miracles! Butter a baking dish while cooking the noodles. Stir the onion, celery and garlic in a buttered saucepan, add the mushroom when all the other ingredients are softened. Cook the mixture until all the water evaporates. Melt about 4 tablespoons of butter and mix it with some flour until it is smooth. Season it as you like and add the tuna and the mushroom, onion, etc. Drain the pasta and add that, too. Sprinkle some bread crumbs and cheese on top, bake for 25 minutes in a preheated oven.
