It’s no secret that there are quite many Italian restaurants in Budapest. What makes Krizia special?
“I think it’s the continuously good quality that we’ve been providing for 20 years now. It’s traditional, people know what to expect when they come to eat here. We work with only the finest ingredients, and with the same crew to this day from the very beginning. I think it makes a huge difference, as many restaurants change their staff frequently, working in shifts while we are closed between 3-6 PM each day or when the staff is on holiday. It means that whenever we can’t provide the same quality, we rather stay closed than having to give anything less than our best. “
How do you form the restaurant’s assortment?
“We have our menu that we always try to renew but many times guests ask for a previous meal that have been changed or removed, so we put it back on the list. We have a daily menu, too, which is all about variety. If I see something fresh that can be used, I immediately start to think about how we could add it to a meal to make it even more special. But we believe in traditions and simplicity, so there’s no far-fetched ideas and experimental food here. Italian cuisine is quite basic if you think about it, made of only a few – but the best – ingredients. I do combine a bit of the Hungarian gastronomy with the Italian. Once a guest asked to have a tortelloni with goose-liver and it has been one of the favourite meals since then. We have a nice wine selection of the two countries as well.”
